Stuffed meatloaf in the oven Quick and easy recipe
Stuffed meatloaf in the oven it is one of those quick dishes that everyone likes a little, even children who hardly eat meat. There are numerous variations (luckily we Italians like the variety of tastes and combinations!) This is the version that has always been made at my house and I think it is also the simplest version and there are hardly any nasty surprises! 🙂
Ingredients for 4 people
- 200 gr of minced meat of your choice
- 3 slices of loaf bread
- milk; 100 gr. of cheese (Scamorza, Galbanino or similar)
- 100 gr of cooked ham
- 3 slices of Speck
- 1 egg
- 2 tablespoons of Parmigiano Reggiano
- salt, pepper, oil

How to make stuffed meatloaf in the oven
Put 3 slices of carrè bread in a saucer with some milk, let the milk absorb for a few moments and squeeze the slices of toast to create wet crumbs, chop them and put them in a large container together with the minced meat, the egg , Parmesan, pepper and two pinches of salt (some also add chopped parsley).
Work all the ingredients with your hands for a few minutes, in order to obtain a soft and compact dough. Spread the meat on a sheet of parchment paper or aluminum paper and create a circle / oval about one cm thick, flatten and level, spread the slices of cooked ham on top (mortadella or prosciuttella is also good)
and the slices of smoked cheese (or similar cheese, sweet auricchio is fine too),
with the help of parchment paper, wrap the meatloaf on itself, close the edges and the tips well to prevent the milk from the cheese from coming out of the inside and opening.
Grease a pan, cover the meatloaf with breadcrumbs and put a few flakes of butter on the meatloaf (or spread oil on the meatloaf and put the breadcrumbs on top, the difference will be in flavor, sweeter using butter). If you want, you can top the meatloaf with slices of speck or raw ham to give it even more flavor.
Put in a preheated oven for 40 minutes at 180 °, covering with parchment paper for 30 minutes and the last 10 without parchment paper ... cut into slices and serve your stuffed meatloaf in the oven ... a good side dish could be a mashed potatoes or baked potatoes. oven and .... GOOD APPETITE !!
