Dessert with figs without cooking Quick and easy recipe
Fig dessert without cooking , I love figs now they are quite rare, in that short period that they are on the market I always take the opportunity to prepare some sweet or fig cake. This is the perfect dessert if you want to serve something at the end of a meal without having to turn on the oven, perfect for the summer and for September. You can use this procedure by adding the fruits we prefer, I also added raspberries because I like the contrast between very sweet and acrid fruits.
Ingredients for a 22x28cm cake pan
- 250 grams of mascarpone
- 280 gr of shortbread biscuits
- 250 gr of fresh ricotta
- 125 gr of butter
- 2 tablespoons of sugar

How to make the fig cake without cooking
Prepare the ingredients on the counter.
Crumble the shortbread biscuits in a mixer thus obtaining a sandy mixture, add the previously melted butter (in the microwave or on a low heat), mix.Pour the mixture into the pan and distribute it evenly in the pan, remembering also on the edges. Press well with a spoon to compact the base of the cake and put in the freezer for 40 minutes.Proceed with the preparation of the cream: put the ricotta, sugar and honey in a large bowl, mix. Also add the mascarpone and 2 tablespoons of yogurt (I used the berries but the vanilla yogurt is fine too), mix everything well to create a smooth and homogeneous cream.Put the cream in the fridge for 30 minutes.
Slice the figs (or other fruits of your choice)and assemble the cake. Take the cream and base from the fridge and freezer, spread the cream and level well on the biscuit base, and decorate with figs and raspberries.Serve the dessert on the table. Enjoy your meal!
NB. This dessert must be assembled just before being served, but the base and the cream can be easily prepared a few hours before. It should be consumed within the day following preparation, well sealed with a sheet of cling film.
WINE PAIRING: With fruit-based cakes it is good to combine sweet and delicate whites perfect, a Malvasia.
