Soft lemon biscuits Quick and easy recipe
Soft lemon biscuits: they are delicious sweets with the unmistakable taste and scent of lemon, the cracks on the surface are the peculiarity of these biscuits, very crumbly and perfect for tea or for a delicious snack. They are a nice idea if you like gifts made with your hands, perhaps accompanied by homemade Sorrento limoncello. Keep them or give them as a gift in a beautiful tin box that preserves their freshness for longer.
Ingredients for 30 biscuits
- 270 gr of flour 00
- 100 gr of butter
- 90 grams of granulated sugar
- 8 gr of baking powder
- 2 lemons (zest of 2 lemons and the juice of 1/2 lemon)
- 1 egg
- a pinch of salt
To garnish
- 3 tablespoons of granulated sugar
- 2 tablespoons of powdered sugar

How to make soft lemon biscuits
With a food processor, whip the softened butter at room temperature at least half an hour before out of the fridge (no other way!) Together with the sugar

granulated and salt, then add the egg, the grated zest of two lemons and the juice of half a lemon,

mix, and finally add the sifted flour and baking powder. You will have obtained a soft and smooth dough. Wrap it in cling film and let it cool in the fridge for 1 hour. Prepare two bowls: one containing powdered sugar and the other granulated sugar.

Prepare the biscuits by taking a little dough to form balls of about 16-18 gr, pass them first in the granulated sugar and then in the icing sugar. Cover a baking sheet with a sheet of parchment paper and place the balls on the baking sheet.

Bake in a preheated oven at 180 degrees for about 12 minutes, until they are lightly browned underneath. The cracks on the surface are normal, indeed that is the peculiarity.
