How to make pumpkin and sausage pasta
Peel the pumpkin, remove the internal filaments and seeds and cut it into cubes, put 3 tablespoons of extra virgin olive oil, 1 clove of garlic and the pumpkin in a large pan, cover with the lid and let the pumpkin cook, also put half a glass of water, cook over medium heat for 10 minutes and add very little salt and pepper if you like,
crumble the sausage and put it in a pan with a drizzle of oil, cook for a few minutes, pour in the wine and simmer (2 fingers of a glass) until cooked,
put the sausage in the pumpkin previously reduced to pulp with the help of a fork and cook for a couple of minutes
cook the pasta I used the orecchiette, drain it a minute before the time indicated on the package and pour it into the pan with the pumpkin and sausage, turn everything to flavor.
