Beans and escarole Quick and easy recipe
There bean and escarole soup it is a typical dish of the Italian tradition, especially from the Center-South. It is the ideal dish for cold winter evenings. The preparation process takes little time and is not too laborious. By adding grilled croutons it becomes a complete and very tasty dish. Try it!
Ingredients for 4 people
- 1 jar of cannellini beans of 350 gr
- 2 heads of escarole
- extra virgin olive oil
- 1/2 clove of garlic and chili pepper to taste
How to prepare Beans and escarole
Drain the beans from the preservation liquid, rinse them under running water and put them in a pot with 3 tablespoons of oil, garlic and chilli, add 2 glasses of water, add salt and let the beans cook for 20 minutes with the lid on the pot. .
In the meantime, take the escarole and remove the hard central part,
remove the hard outer leaves and wash the escarole under running water; still dripping with water, put the escarole leaves in another pot (without water)
cover with the lid and let the escarole boil for 10-15 minutes. With the immersion mixer, blend a part of the beans, and add the boiled escarole to the beans,
let it cook for a few minutes, season with salt and serve. Separately, prepare croutons on a grill with stale bread to which you have added a drizzle of oil and salt,
put the croutons in the soup and serve. And your bean and escarole soup is ready.
