Sicilian pasta and cauliflower Quick and easy recipe

Sicilian pasta and cauliflower: in dialect "pasta chi vrocculi arriminati" (or "arriminata ”when referring to pasta ) Italianized "with broccoli in a pan"In which i vrocculi broccoli is not intended but the violet cauliflower of Sicily (if you don't find it - like me - white is fine too) and the term arriminati it means mixed (inside the pan). It is one of the most loved classic dishes in Sicily, together with cauliflower we find various symbolic ingredients of Sicilian recipes: raisins (passerina), pine nuts, salted anchovies, toasted breadcrumbs and saffron (used in the most " rich "or tomato extract in the most popular version). The final addition of the browned "crumb" is fundamental to give crunchiness to the dish. I recommend this dish to those who do not have banal tastes!

Ingredients for 4 people

  • 360 gr of bucatini (or margherita pasta)
  • 600 gr of Sicilian violet cauliflower (if you don't find violet, white is fine too)
  • 5 anchovy fillets
  • 30 gr of pine nuts
  • 30 gr of raisins ("passulina")
  • 1 sachet of saffron (or 1 teaspoon of tomato extract)
  • 4 tablespoons of toasted breadcrumbs ("muddica atturrata")
  • 1 onion
  • extra virgin olive oil

How to make Sicilian pasta and cauliflower

Prepare all the ingredients on the work surface.

Cut the hard part of the cauliflower and remove all the florets, wash them and put them in plenty of boiling water to cook for 15 minutes (1). In a large pan, sauté the onion and add after a few minutes add the anchovies and melt them by mashing it with a spoon (3). Add the cauliflower, i Pine nuts, lo saffron and theraisins (4).

Stir (arriminate!) And mash the cauliflower until it is almost a puree (5). Meanwhile, cook the pasta in plenty of salted water. In another pan, just toast the breadcrumbs with a thread of oil (6). Drain the pasta al dente, pour the pasta into the pan with the cauliflower, add a few tablespoons of cooking water, mix everything well to mix the ingredients (7).
