Risotto with zucchini Quick and easy recipe
Risotto with courgettes and courgette flowers: they are actually courgette flowers but are generally called "courgette flowers". This recipe is also suitable for those on a diet, just a few tablespoons of oil and zucchini at will. Zucchini are rich in water, have a low calorie content, therefore perfect if you are on a diet, they have little salt, are refreshing and digestible. Ingredients for 4 people
- 300 grams of Carnaroli rice
- 3 small courgettes with flowers
- 1 clove of garlic
- 4 tablespoons of extra virgin olive oil
- salt and pepper
How to make risotto with zucchini
Wash the courgettes, remove the ends and cut them into small pieces.Put them in a pan with oil and a clove of garlic and cook for about ten minutes.
In a separate pot, prepare the vegetable broth (or use the granular broth).
pour the rice into the pan and add the broth previously prepared, one ladle at a time, proceed by adding the next one only after the previous one has been absorbed
add a couple of tablespoons of stracchino cheese if you like it (I'm on a diet and I preferred to avoid it, it tastes very good even without stracchino!)… and your Risotto with courgettes is ready !!!
