Risotto with asparagus Quick and easy recipe

Risotto with asparagus : I've never been a fan of asparagus but this time I have to change my mind, they have a well-defined flavor even if not overly preponderant. Asparagus is rich in minerals and vitamins, they are diuretic and low in calories. In risottos they are perfect, it is possible to add some other ingredients to this recipe but the dish is already perfect. They can enrich the dish with strips of bacon or, the variant I prefer, includes a few spoonfuls of robiola, but in this period it is better to keep light!

Ingredients for 2 people

  • 200 gr of Carnaroli rice (or Vialone nano)
  • 12 green asparagus
  • 1 white onion
  • 2 tbsp grated Parmesan
  • butter
  • extra virgin olive oil
  • celery, carrot,
  • salt

How to make risotto with asparagus

Prepare the vegetable broth with a carrot, half an onion and a stick of celery.
Wash the asparagus and remove the woody part and the end of the stem with a potato peeler. Put the asparagus in the vegetable broth and let them cook for 5 minutes. Drain the asparagus, cut the tips and keep them aside.

take the stems (except 2) and put them in a container, blend them with the immersion mixer together with a pinch of salt and a drizzle of oil

Put 2 tablespoons of oil, a knob of butter and 1/4 of chopped onion in a saucepan, fry for a few moments and add the rice, let it toast over a high heat until it begins to stick to the sides of the pan.

Add a ladle of broth at a time (let the previous one absorb before adding the next one) after the first ladle add the asparagus cream and the two asparagus kept aside cut into small pieces

4-5 minutes before the rice is cooked, add the tops (keep a couple aside to decorate). Finally, over the heat off, add 2 tablespoons of grated Parmesan cheese, stir .. and your asparagus risotto is ready. Enjoy your meal!
