Soft peach and yogurt cake: here is a very soft and not dry dessert thanks to the presence of fruit, this time I used peaches taking advantage of seasonality. The base is the one I prefer already used for the pineapple cake and the soft cherry cake. You can replace yogurt with fresh cream (same quantities), this cake will be perfect for breakfast and for a snack for children. Try it!
Ingredients for a 22 cm cake pan
- 3 peaches
- 200 grams of flour
- 200 gr of yogurt
- 150 grams of sugar
- 2 eggs
- 4 tablespoons of peanut oil
- 1 sachet of yeast
- a pinch of salt
- a teaspoon of brown sugar
- a knob of butter
- grated zest of half a lemon
How to make a soft peach and yogurt cake
Put it in a large bowl sugar and the eggs, mix with the whisk until the mixture is frothy,
add half of the total amount of yogurt, L'seed oil, the half grated zest lemon
Add the flour, half a sachet of yeast, the remaining yogurt and a pinch of salt, mix with the whisk
Grease and flour an opening mold and pour the mixture into it, decorate with peaches, if you like the fruit to be very present, cut into small pieces and add them to the mixture before pouring it into the pan. Decorated with slices of peaches. on the surface, if you want the peaches to remain on the surface, cut them thinly, if you prefer them to sink into the cake then cut the thickest slices. Add a little brown sugar to the surface to create a sweet and crunchy crust.
Bake at 180 ° for about 40 minutes, after 5 minutes of cooking cover with a sheet of aluminum foil, remove it when there are 10 minutes from the end of cooking and let it brown on the surface too.
