Hubby soup Quick and easy recipe
Maritata soup: it is a typical holiday dish of Neapolitan cuisine, prepared both at Christmas and Easter. The soup married is among the oldest recipes of Neapolitan cuisine, you have to combine various types of vegetables (you can add from 5 to 16 different types of vegetables), some sweeter, others bitter, to create a balance of flavors. "Maritata" that is "accompanied" given the presence of meat, and also for meat the types are different: chicken, sausage and beef. I prepared it with the help of my mother, to let me reveal the various steps of this somewhat complex recipe given the presence of many ingredients, but still simple to make.
Ingredients for 4 people
- 1/2 hen
- 500 gr of beef
- 3 spicy sausages (usually made with pork intestines)
- mixed vegetables: 300 grams of small escaroles,
- 300 gr of borage
- 300 gr of wild chicory
- 400 gr of leafy broccoli
- 500 gr of chard (better wild)
- parmesan peel and pieces of pecorino romano
- 1 onion, carrots, 1 stick of celery
- Salt to taste
How to make married soup
Clean the hen from the entrails and cut it into large pieces, also cut the beef into large pieces and set aside.
Fill a large pot with water, add the onion cut in two, the celery stalk, the carrot and the salt, bring to a boil, then add the chicken and the beef and let the broth cook for at least an hour over low heat.
in another pot, blanch the sausages to degrease them a little and add them to the broth, cook the broth for another hour over low heat.
Meanwhile, blanch the vegetables for a few minutes. When the broth is ready, remove the meat and set it aside, let the broth cool and degrease it (remove the patina that has created on the surface with a spoon), then add the vegetables and the meat, the rinds and the pieces of cheese, and cook for a few more minutes, adding salt if necessary.
Serve and serve Maritata soup hot.
