Russian Salad Quick and easy recipe
Easy and quick Russian salad to make Christmas recipe: it is a dish of the Russian and Piedmontese tradition, in France it is in fact called "salade piemontaise". It is served as an appetizer (sometimes also as a side dish), now widespread throughout Italy, in my part (Naples) it never fails on the tables during the Christmas period. Sometimes when faced with traditional dishes, one always approaches with a little fear and yet there are some that are very simple to make and without too much effort you bring to the table something that must be there! It is a dish that gives color to the table and is also very tasty. Try it! It seems very caloric… in fact it is, but you can limit the damage by using yogurt mayonnaise like I did, and eating just a taste.
Ingredients for 6-8 people
- 5 medium potatoes
- 3 carrots
- 300 gr of mayonnaise
- 300 gr of frozen peas
- 100 gr of pickled cucumbers
- 80 gr of canned tuna
- 1 "papaccella" (pickled pepper)
- 50 gr of chopped pistachios (optional)

How to make Russian salad
Dice the potatoes and carrots, bring 3 fingers of water to the boil in a saucepan, pour the carrots and peas, cook with the lid on for 12-13 minutes, drain and let cool. In another saucepan, cook the potatoes for 9-10 minutes. drain and let cool.
Put everything in a bowl, add the drained and chopped tuna, add pickled gherkins (I don't like them so I didn't put them) and a few tablespoons of mayonnaise (not all!) Mix the ingredients well
put the Russian salad on a serving dish, smooth the surface with a spoon and add more mayonnaise if necessary. Level the surface with a spoon, decorate to your liking with gherkins, pickled pepper and chopped pistachios.
Refrigerate for at least an hour and serve.
