Homemade Brisee Pasta Quick and easy recipe
Homemade Brisee Pasta (there pasta brisee): I generally buy ready-made rolls of shortcrust pastry, I find them very practical, but then I decided to try to prepare it at home, the recipe is very simple, the ingredients are only 4 and we always have them in the fridge, a mixer with a large blade and in 3-4 minutes it is ready, just wait 1 hour to let it rest and cool in the fridge and that's it! You can use it as a base to create savory pies, quiches or to wrap sausages and create small appetizers for parties and buffets. For those who love to prepare everything at home and avoiding preservatives and various additives, this recipe is perfect.
Ingredients for a pan of 24-26 cm in diameter
- 200 grams of flour 00
- 100 gr of butter
- 70 ml of cold water
- salt (half a teaspoon)
How to make homemade Pasta Brisee pasta
Put the flour and cold butter cut into pieces in the mixer,
run the mixer 2-3 times at high speed for a few seconds, it will create a grain,
add the water and salt (half a teaspoon) and run the mixer again at high speed for a few seconds, the time necessary to compact all the dough on one side only.
turn off the mixer and pour the dough onto a smooth surface (marble, aluminum paper or parchment paper) lightly floured and knead quickly,
form a ball and seal it with a little plastic wrap, wrap it and put it in the fridge to cool for 1 hour.
Roll out the shortcrust pastry on a sheet of parchment paper and using a lightly floured rolling pin create a circle about 4 mm thick. Your shortcrust pastry is ready,
use it always using parchment paper in contact with the pan as for ready-made shortcrust pastry. If you want to use it later (within 2-3 days of preparation) just wrap it in parchment paper, seal the ends by folding the parchment paper towards the inside of the roll and put in the fridge.
It will be ready for use, just unroll and always use parchment paper. To cook quiche and savory pies it takes about 30 minutes in a preheated oven at 180-200 °. It will be ready when it is golden.
