Zucchini rolls simple, fast and delicious recipe
Zucchini rolls delicious side dish with slices of zucchini wrapped in a filling of bacon and fontina. For the preparation it takes only 10 minutes and another 10 minutes of cooking in the oven to let the rolls brown. You can prepare them the day before and put them in the oven just before serving. I closed them with a toothpick but you can also create skewers with 2-3 rolls each. Try them they are very tasty!
Ingredients for 10-12 rolls
2 medium zucchini
200 gr of thinly sliced fontina cheese (or scamorza)
80 gr of stretched bacon (or cooked ham)
4 tablespoons of breadcrumbs
2 tablespoons of grated Parmesan
pepper and extra virgin olive oil
Courgette rolls preparation:
Wash the courgettes and with the help of a mandolin cut them into thin slices, heat a grill and cook the slices for 4 minutes per side. Let the slices cool and prepare the panure consisting of 4 tablespoons of breadcrumbs and 2 tablespoons of grated Parmesan. Cut the fontina into very thin slices.
Pass the grilled slices in the panure, bread them on both sides and overlap a strip of fontina and a thin strip of pancetta (a strip that is half the width of the courgette slice is also enough, the pancetta is very tasty.
wrap the courgette slice to create the roll and close it with a toothpick. Arrange the rolls in a baking dish, add pepper and a drizzle of oil on the surface.
Bake for 8-10 minutes in a preheated oven at 180 °. Remove from the oven and serve, they can also be served cold. And your baked zucchini rolls are ready. Enjoy your meal!
