Pasta with prawns, lime and anchovies Quick and easy recipe
Pasta with lime prawns and anchovies for 4 people it is a fresh first course with a citrus flavor. The bitterness of the lime peel exalts very well the sweet note of the prawns balanced also by the salty anchovies: a different way to cook the prawns very quick and easy to make.
Ingredients for 4 people
- 320 gr of pasta (I chose the farfalle)
- 10-12 shrimp
- 1 lime
- 1/2 shallot
- 3 anchovies
- 8 tablespoons of extra virgin olive oil
- 1 cup of white wine

How to make Pasta with prawns, lime and anchovies
We put a saucepan with plenty of salted water on the stove to cook the pasta. In the meantime, wash and clean the shrimps: remove the head, the carapace, the legs and the black thread on the back (the intestine), rinse under running water and set aside.
Put the oil in a large pan (plenty of it as it will be the only seasoning), add the chopped shallot and the anchovies, let it fry for a few moments until the shallot has browned and the anchovies have melted
add the prawns, let them cook and season for a minute and then pour a cup of white wine, let it evaporate
add the drained pasta al dente and let it flavor together with the prawns, turn off the heat and add the grated rind of the lime and the chopped parsley.
