Mussel Soup Quick and easy recipe

Marinara mussel soup: similar to the mussel pepper, but with a few less ingredients and of course the pepper is a must !!! It is not difficult to prepare! Indeed, the realization is very simple, just pay attention to the cleaning of the mussels and you can eat a delicious plate of mussels, complete with croutons and sauce !! The ingredients are few and we have them all at home.

Ingredients for 4 people

  • 2 kg of fresh mussels
  • 4 tablespoons of extra virgin olive oil
  • 1 clove of garlic
  • 1 bunch of parsley
  • abundant black pepper
  • croutons (or homemade bruschetta)

How to make Mussel Soup

Start by cleaning the mussels, put them in a large bowl, and clean under running water, with the back of a knife blade remove the external encrustations and parasites (barnacles) on the shell and remove the beard (byssus) that comes out with your hands from the mussels, using a steel kitchen net (or a mussel brush) scrubbed externally to remove all the remaining impurities, the whole operation will be carried out under running water.

In a large pan (or in a tall and narrow pot) put the oil and garlic, lightly brown the garlic and pour the mussels inside, cover with the lid and the steam produced in the pan in 5-7 minutes will open the mussels, those still closed will be thrown away. Add plenty of parsley and turn off the heat.

Serve by placing the croutons on the bottom of the plate or sideways (if you do not find the croutons you can prepare them by toasting slices of bread in a pan on which you have previously passed a drizzle of oil) add the mussels and their sauce, finally a generous grind of black pepper and serve hot.
