Ingredients
- 300 gr flour
- 1 glass of sparkling water

How to make battered fried cod
Prepare the batter: put the flour in a large bowl, put the yeast in the center and pour a little water over the yeast, let it melt and start kneading, gradually adding the water, the mixture should have a "flush" consistency, that is not excessively liquid but not too thick, let it rest for at least an hour and a half
Wash the cod (previously soaked on sale you can also find it already soaked), remove the skin and the bones, cut the strips first and then cut the strips into pieces
 In a high-sided pan put the oil (4 fingers of oil) and heat the oil well, dip the pieces of cod in the batter and then dip them in the hot oil
fry on both sides, just long enough for them to become golden and crunchy. Salt and pepper
