Pizza Muffin: savory muffins perfect for party buffets or for a picnic, the single portions are very convenient, they avoid having to use forks and plates. then the recipe is really easy to make. Using instant yeast, you don't have to wait for leavening. In 5 minutes they are ready to bake and after 20 minutes they are ready! Try it.
Ingredients for 6 muffins
- 250 grams of flour 00
- 130 ml of water at room temperature
- 30 ml of extra virgin olive oil
- 15 gr of baking powder for salted tore
- 1 pinch of sugar
- 1/2 teaspoon of salt
- 100 gr of tomato puree
- 100 gr of mozzarella (kept in the refrigerator)

Prepare all the ingredients on the work surface; cut the mozzarella previously kept in the refrigerator into cubes (so as to be drier). In a small bowl put the tomato pulp and add a drizzle of oil, oregano and a pinch of salt.
Prepare the dough with the planetary mixer or by hand (first add the flour, yeast and sugar, then the water, mix a little and finally add the oil. First use the leaf hook to mix and then the one to hook (for about 5 minutes), at this point add the salt.
Put the dough on the floured work surface, it may still be a bit sticky, add a little flour in this case. Divide the dough into 6 pieces of about 70 g each
Roll out the individual pieces of dough to make a pizza, add 1 teaspoon of tomato pulp, a little grated Parmesan and 3-4 cubes of mozzarella.
Close the mini pizzas into a bundle by pulling the flaps upwards (as for Chinese ravioli),
put the closure upwards and add on the surface a little more tomato pulp, a little parmesan and other cubes of mozzarella.
Bake in a preheated oven at 180 degrees for 20 minutes.
