Octopus salad with potatoes Quick and easy recipe
Salad octopus with potatoes here is a cold recipe for a light and refreshing summer dinner. It is a single dish and in about 40 minutes everything is ready. try it!
Ingredients for 4 people
- 1 kg of polyp
- 4 medium potatoes
- extra virgin olive oil
- 1 can of corn (to taste)
- salt, black (or green) olives
How to make octopus salad with potatoes
Have the fishmonger clean the octopus, wash it with running water, cleaning the tentacles well, then put a large pot full of water on the fire, boil the water and immerse the octopus tentacles 3-4 times, after this operation they will curl. Then let them cook in water for about 30/40 minutes
the octopus will be cooked when piercing it with a fork it is soft but compact
in the meantime, cook the potatoes, cut them into pieces of the size you prefer, I cut them small for faster cooking (15 minutes), drain and put them in a salad bowl,
also cut the octopus into pieces and put it together with the potatoes, add the extra virgin olive oil and corn, parsley and if you like olives
Let it all cool, plate up and serve (you can also keep it in the fridge just take out the octopus about ten minutes before serving). And your octopus and potato salad is ready. We ate it on a terrace overlooking the sea in Cilento 🙂 Enjoy your meal!
