Ingredients for 4 people
- 1 cauliflower
- 300 grams of flour 00
- 1-2 gr of yeast (fresh cube)
- 1 glass of cold beer (or in the absence of one of water)
- salt and pepper
- peanut oil
How to make cauliflower in batter

If, on the other hand, you have beer, prepare the batter with the following recipe: in a large bowl put the flour, the crumbled yeast in the center and a little cold beer on yeast, begin to knead with your hands, gradually adding the whole glass of beer. , the mixture must have a smooth consistency, that is, not too thick and sticky and not too liquid. Let it rest by covering with a cloth for an hour
Prepare the cauliflower: remove the outer leaves of the cauliflower and the core, wash it quickly under running water, dry it with absorbent paper and gently remove the individual buds, removing the blackened ones if present and proceed with steam cooking (click here for a very simple cooking steam) over medium heat for 10 minutes.
put the tops and the pieces of cauliflower - a few at a time - in the batter with the help of two teaspoons, dip them in the hot oil
fry a few pieces at a time in peanut oil using a narrow and high saucepan, dip the cauliflower in batter when the oil is very hot (just put a drop of batter in the oil, if it sizzles then the oil is ready) .
