Orecchiette with broccoli easy, quick and tasty recipe SempliceVeloce
Orecchiette with broccoli: the original recipe of this typical dish of the Apulian tradition, sees turnip greens as an ingredient, not always found on the market, unlike broccoli which are much more widespread, obviously you must always follow the seasonality of the products, we find broccoli on sale in the period from September to April. The result was actually very similar to the famous orecchiette with turnip tops, a typical Apulian dish.

Ingredients for 2-3 people
- 300 gr. of broccoli
- 170 gr. of orecchiette
- extra virgin olive oil
- 2 anchovies in salt
- chili pepper
- sale, garlic
How to make Orecchiette with broccoli
Cook in the water (which you will then use to cook the pasta) i broccoli for a few minutes
drain the broccoli and finish cooking in a pan to which you have previously added theoil, the anchovies in salt, thegarlic and a chili pepper
cook for about ten minutes, take a part of the broccoli and blend them with the immersion mixer, thus creating a sort of broccoli pesto
add the broccoli pesto to the pan, season with salt and turn off the heat
cook the orecchiette in the water you used to blanch the broccoli (so they will already take the flavor of the broccoli), keep the cooking water in a glass .. Drain the orecchiette and pour them into the pan with the broccoli, if too dry add a little cooking water, turn and mix everything. And here your orecchiette with broccoli are ready, the result will be very similar to orecchiette with turnip tops, but with a less bitter taste. Serve and enjoy your meal!
