Stuffed artichokes Quick and easy recipe
Stuffed artichokes: this recipe is really simple, and success is guaranteed! The artichokes are from this period, and in fact on the Easter table there is always some recipe with artichokes. Today I am posting the version with minced meat filling but you can very well replace it with diced Napoli salami.
Ingredients for 4 artichokes
- 4 artichokes
- 100 gr. minced meat (or 4 slices of Napoli salami)
- 100 gr of provolone
- 1 whole egg
- 1 tablespoon of grated Parmesan
- 1/2 glass of white wine
How to make stuffed artichokes
Clean the artichokes by removing the outer leaves (the hardest ones), cut the outer part of the core and finally remove the internal beard of the artichoke with a small knife (leaving the shape intact). Put the artichokes in water with half a tablespoon of flour (or the juice of half a lemon; it helps not to brown the artichokes). If you want to avoid using minced meat you can use a few pieces of Napoli salami and skip to step 3 of the procedure.
Soften the crumb in a little milk, squeeze the crumb, beat the egg with a tablespoon of Parmesan (or pecorino romano if you prefer), add a pinch of salt and pepper. add the breadcrumbs to the beaten egg, add the minced meat, add salt and pepper. Keep the filling aside.
Just dry the artichokes with a little kitchen paper, place them in a saucepan (which you will use both for cooking on the fire and for the oven) so that they fit together. Add the filling, add a few pieces of cheese (or provola in this case). Cover the filling with breadcrumbs mixed with grated Parmesan, add 1 glass of water, a clove of garlic and a little white wine to the saucepan. Finally on the artichokes add a pinch of salt, a drizzle of oil and a little chopped parsley and flaked pecorino romano. Put on a medium heat and cover with the lid, let it cook for 15 minutes.
Turn off the heat, remove the lid and bake at 200 ° in a preheated oven for 7-8 minutes or in any case until a crispy crust has formed on the surface.
