Quiche with artichokes, speck and ricotta: tasty side dish, or a single dish accompanied by a salad, savory pies often save us when we have no ideas for dinner, or for party buffets, for picnics, they are also so versatile and open to infinite combinations of ingredients. I particularly love artichokes and as soon as I find them on the market I prepare them as a side dish, or as in this case, in combination with speck and ricotta to stuff this delicious quiche, you can also add soft cheese cubes to make it even tastier.
Ingredients for 4 people per 26cm pan
- 1 roll of shortcrust pastry or puff pastry
- 3 artichokes
- 2 slices of speck
- 300 gr of ricotta
- 2 tablespoons of grated Parmesan cheese
- 1 egg
- salt and pepper
How to make Quiche with artichokes, speck and ricotta
Remove the outer leaves of the artichokes, cut the tips of the leaves which are the hardest and most annoying part, cut the artichoke in half and remove the internal beard, then cut some slices, put the artichokes in water acidulated with half a lemon, brown the artichokes
Prepare the ricotta cream, put the ricotta in a bowl, add the egg, salt, pepper and grated cheese.
Turn on the oven at 180 degrees.
Unroll the shortcrust or puff pastry, place them in a round baking pan using the parchment paper in the package. Prick the base with the tines of a fork, pour the cream inside,
then add the artichokes and strips of speck. If you want you can also add some cheese cubes.
Bake at 180 degrees for 45 minutes. Remove from the oven and serve. Enjoy your meal!
NOTES: with these doses the savory pie will be quite low, if instead you want a much higher savory pie use 500 grams of ricotta and 3 eggs, the mixture in this way will be a little more liquid and can be poured on the artichokes that will be covered from the cream, cooking will be a little longer (another 10 minutes).
