Pasta with zucchini and speck Quick and easy recipe
Pasta with zucchini and speck: here is a first course that will just take away the cooking time of the pasta, maximum 10 minutes! Among the quick recipes is one of my favorites: with a few ingredients you will get a first course full of taste and the realization is really simple! It is a variant of the famous Nerano pasta that Totò and Eduardo de Filippo loved so much, the addition of speck gives it even more taste, furthermore grating the zucchini with the grater with large holes will further reduce the cooking time. Try it!
Ingredients for 2 people
- 180 gr of pasta (I used the cut mezzani)
- 2 medium zucchini
- speck slices (2)
- 2 tablespoons of grated Parmigiano Reggiano
- 2 slices of sweet cheese (scamorza or Galbanino)
- Garlic powder (or 1/2 fresh garlic clove)
How to make pasta with zucchini and speck
Bring water to a boil to cook pasta, cook it al dente, then one minute less than the time indicated on the package.
In the meantime, wash the zucchini, remove the two ends with a knife and grate the zucchini with the grater with large holes,
Pour the courgettes into a pan with a drizzle of extra virgin olive oil, add a little salt and thegarlic powder (just the tip of a teaspoon, or half a clove of fresh garlic to remove at the end of cooking) let the zucchini cook for 2-3 minutes. Keep the courgettes aside.
In another pan put it speck cut into strips and let it cook for a few moments, just long enough for it to become crunchy. Turn off the heat and set aside.
Cut the sweet cheese into cubes and set aside 2 tablespoons of Grated Parmesan cheese.
Drain the pasta al dente, pour it into the pan with the courgettes, mix and add the grated Parmesan cheese, the sweet cheese cubes and the speck,
Serve and serve. And here is yours tasty pasta and zucchini.
