Colomba cake with almonds: this cake has the appearance of a dove, although in reality it is a simple cake with almond flour and ricotta. I used the recipe for a dessert that I often prepare for breakfast, the soft almond cake, I really like it because it is moist inside and very fragrant. Perfect for Easter breakfast or to give as a gift instead of the traditional colomba which has a very long and laborious preparation.

Ingredients for a cake pan of cm 24 in diameter
or in the shape of a dove of cm 37 x26 x 4h

Put the eggs and sugar in a bowl, blend with an electric mixer until the mixture is light and fluffy
Add the previously sifted ricotta, always mix with whips
Add the butter previously melted in the microwave and left to cool slightly and the grated rind of an untreated lemon
Finally add the flours and mix again for a few moments
Pour the mixture into the previously buttered dove-shaped mold
add the sliced almonds and the granulated sugar to the surface
Bake in a preheated oven at 180 degrees for 40-45 minutes. If it should darken on the surface, place a sheet of aluminum foil on the cake.
Test with a toothpick to check if the cake is ready, if after having stuck it in the cake it comes out dry then your Colomba cake with almonds is ready. Enjoy your meal!
