Cantonese rice quick and easy recipe
Cantonese rice, the recipe proposed today is the classic one that we find in Chinese restaurants in Italy, these ingredients are obviously slightly modified in the Italian recipe according to Western taste.
It is one of the most popular dishes of Chinese cuisine along with spring rolls, chicken with lemon and chicken with almonds.
Ingredients for 2 people:
- 150 g. of basmati rice
- 200 gr of peas, 1/2 shallot,
- 2 tablespoons of bean sprouts (optional)
- 100 gr. of diced cooked ham
- 1 egg
- 3 tablespoons of peanut oil
- 2 teaspoons of soy sauce

How to make Cantonese rice
Start by rinsing the basmati rice with cold running water, then place it to cook in plenty of salted water. Stew the peas with a drop of oil in a saucepan, adding a little hot salted water at a time, until cooked and turn off the heat when they are still crispy and deep green.
Beat the egg in a bowl together with the salt, then heat two tablespoons of oil in the wok, add the egg mixture and scramble them, making them cook very well; then transfer them to a plate and finely chop them with a fork.
Chop the onion very finely and divide it into two parts: put one part in a pan with a tablespoon of oil, add the drained peas and let them fry for a few moments; in the same pan then add the soybean sprouts, the omelette and the ham cubes and cook over high heat for 1-2 minutes
Move these ingredients to a plate and fry a tablespoon of oil and the other half of shallot in the same pan, sauté it in the wok and add the soy sauce, and turn, separating the grains well.
at this point add the other ingredients that you have previously sautéed in the rice pan (peas-omelette-ham and bean sprouts) cook all the ingredients over medium heat for a couple of minutes, serve yours quick and easy Cantonese rice and GOOD APPETITE!
