Saffron Risotto Quick and easy recipe
Saffron risotto: it is a typical dish of northern Italy, it is often confused with the Milanese risotto but there are differences: in the saffron risotto, for example, there is no ox marrow present in the Milanese one, moreover wine is used for blend the risotto unlike the Milanese. Saffron risotto is often used as a base to which porcini mushrooms, truffles or sausages are then added, and there are those who also use it as a base for seafood risotto. But already on its own with the addition of parmesan and butter it is delicious, try it!
Ingredients for 2 people
- 180 gr of carnaroli rice
- 1 sachet of saffron
- 2 tablespoons of Parmigiano Reggiano
- 1/2 onion
- 1 generous knob of butter
- 1/2 glass of white wine
- 1/2 liter of broth

How to make saffron risotto
Finely chop the onion, put a piece of butter (40 g) in a saucepan (I, cooking for 2 people, I used a small saucepan, for several people use a low and wide saucepan), brown the onion without letting it lightly brown always stirring with a wooden spoon, add the rice and toast it for a minute in order to absorb the butter,

turn up the heat and pour the white wine over the rice, let it evaporate and then add 2 ladles of broth,
