Round zucchini stuffed with rice Quick and easy recipe
Round zucchini stuffed with rice salad: in this recipe I used the round courgettes that seem to be made specifically to be filled, I prepared a very light rice salad with brown rice, barley and spelled cherry tomatoes and tuna and so I stuffed the previously emptied and cooked zucchini vapor. A scenographic and very simple recipe, but above all very light, a perfect single dish for those on a diet.

Ingredients for 2 people
- 2 stuffed round courgettes
- 120 gr of brown rice, spelled
- 6 cherry tomatoes
- 1 small can of corn
- natural tuna
- 6 black olives
Round zucchini stuffed with rice preparation
Wash the round courgettes, cut the top cap and empty the courgette first with a knife and then with a teaspoon, the thickness of the outer part must be about 1 cm.
Place the courgettes in the steamer basket and 4-5 fingers of water in the pan below, cover the basket with a lid the same size as the basket and cook for 15-20 minutes from the start of the boil. The courgettes should be soft but still firm and still bright green.
Let the courgettes cool in a colander, putting them upside down so that they empty out of the cooking water and vegetation. Keep them aside and cook the rice in plenty of boiling salted water for the time indicated on the package. Prepare the other ingredients in a bowl, drain and rinse the corn, wash the black olives and capers, thus removing the excess salt. Cut the cherry tomatoes into small pieces.
Drain the rice, pour it into a bowl and add a couple of tablespoons of extra virgin olive oil. Add all the other ingredients and mix.
Fill the courgettes with the rice salad and your courgettes stuffed with rice are ready. Fast and light!
Nutritional information: courgette is almost completely free of calories, so it is a great ally for those who follow a low-calorie diet and is also composed of 93.60% water. It is rich, like other vegetables, in mineral salts, especially potassium (200 mg per 100 g).
