Chicken Cacciatore Quick and easy recipe

Chicken Cacciatore: one of the most famous recipes of the Italian tradition, originally from Tuscany, there are many variations, with or without the addition of ingredients, there is also the white version without cherry tomatoes. Perfect for a quick dinner (the preparation is really simple and just put in the pan and the cooking goes by itself!). Today I have prepared the version I love most, very simple and with a sauce in which the shoe is a must! If you add more tomatoes as well as an excellent second course with the sauce you will get, you can also season a few portions of pasta!

Ingredients for 3 people

  • 1 whole chicken cut into pieces or 6 drumsticks or thighs
  • 300 gr of fresh cherry tomatoes, or canned, or peeled
  • 1 clove of garlic
  • celery, carrot and onion
  • extra virgin olive oil
  • 1/2 glass of red wine
  • pepper, salt
  • parsley

How to make the Chicken Cacciatore

Put the chicken previously cut into pieces, or the drumsticks / thighs. in the pan, leave the skin. Prepare the large pan that will contain the chicken with the sauce: put 1-2 tablespoons of extra virgin olive oil, the mixture for sautéing, the clove of garlic and the oil base, brown the chicken on both sides for 3-4 minutes from both sides

add half a glass of red wine, let it evaporate, and finally put the peeled tomatoes in the pan.

Cover with the lid and cook over medium heat for about half an hour ... while cooking, turn the chicken pieces. When cooked, season with salt, add pepper and parsley. Put on a plate and serve hot. If you add a little more cherry tomatoes with the sauce you get, you can season the pasta (about 2 plates of penne or rigatoni).
