Cabbage and rice rolls : A real single dish with rice, sausage and cabbage, first course and side dish all in one!
Ingredients for 10 rolls
- 1-2 savoy cabbage (10 leaves needed)
- 200 grams of carnaroli rice
- 1 sachet of saffron (optional)
- white onion
- 2 sausages
- extra virgin olive oil
How to make cabbage and rice rolls
The first thing to do is prepare the rice, I made a saffron risotto and I added a crumbled sausage almost at the end of cooking (remove the skin of the sausage, put it in a pan with a drizzle of oil and crumble the meat with a fork, as soon as it begins to brown and changes color, turn off the heat and add the sausage to the risotto to finish cooking both)
Use the most tender leaves of the cabbage, try not to break them. Cut only the hard part into 2 parts, to allow better cooking. Wash the leaves under running water, immerse them in a pot with boiling water for 2-3 minutes.
put a spoonful of filling in the center of the leaf and wrap it by closing it in a package, folding the outer side flaps inwards and then wrap it like a roll. Whole leaves are preferable, but if they break you can also use half a leaf or overlap a piece of leaf on the broken part.
put in a baking dish with a drizzle of oil on the bottom. Place the rolls next to each other, with the closure facing down. Cook for 10 minutes in the oven at 200 °. Serve lukewarm.
