Pasta with dried tomatoes Quick and easy recipe
Pasta with dried tomatoes in oil: few ingredients and lots of taste! It is possible to replace the pecorino with breadcrumbs previously toasted in a pan together with parsley. A very quick dish to prepare, just the cooking time of the pasta.
Ingredients for 2 people
- 160 gr of pasta (I used linguine)
- 7-8 dried tomatoes in oil
- garlic and chilli (I used them dried from Cannamela)
- 4-5 tablespoons of extra virgin olive oil
- 1 tablespoon of grated Pecorino Romano
How to prepare pasta with dried tomatoes
Cook the pasta in plenty of not too salty water (the sauce will already be very tasty). In the meantime we proceed with the preparation of the dressing: cut the dried tomatoes in oil into strips,
put them in a pan with the extra virgin olive oil and a tablespoon of the oil in which the tomatoes were contained. Add the chilli and garlic and sauté for 2-3 minutes.
Turn off the heat and drain the pasta one minute before the cooking time indicated on the package. Put the linguine in the pan with the tomatoes and leave to flavor by turning everything.
Add the parsley and serve. Sprinkle each portion with grated pecorino romano. And your pasta with dried tomatoes in oil is ready.
