Onion and egg pasta recipe quick and easy
Onion and egg pasta: it is a poor dish, fast and very simple to make. The sweetness of the withered onion, the salty of the cheese and the egg that binds it all make this dish tasty. As a child I often ate it, my brother a few years older than me, he thought he had invented this dish (then I discovered that in Umbria it is a traditional dish but spaghetti is used). Try it, nothing easier and tastier!
Ingredients for 2 people
- 160 g. of short coarse pasta
- 1-2 white onions
- 1 whole egg
- salt,
- extra virgin olive oil,
- pepper
- 1 spoon of grated Parmesan or pecorino

How to make onion and egg pasta
finely chop the onion and put it in a pan with 3 tablespoons of oil, cook over medium heat until it becomes dark (but not burnt!)

In the meantime, cook the pasta, drain it and pour it into the pan with the onion, add an egg and turn to scramble the egg and mix the ingredients. add the salt, pepper and parmesan.
