Curry rice with chicken and pineapple quick and easy recipe
Curry rice with chicken and pineapple: it is an oriental dish. We can find it in India, China and Thailand and in any case it has in its ingredients the typical flavor of Asian dishes. We find this dish as I propose it especially in Chinese restaurants in the West; in Asia this same dish would be composed differently: chicken and pineapple covered with some very spicy or sweet and sour sauce and white rice to accompany everything. I propose the version of Chinese restaurants because it is closer to the Italian taste but the taste is very similar.
Ingredients for 2 people
- 160 g. of basmati rice
- 120 gr. of chicken breast
- 120 gr. of pineapple
- 80 g. of frozen peas
- 1/2 shallot
- soy sauce
- 1 teaspoon of curry powder
- 1 stock cube
- seed oil (or olive oil)
- salt

How to make chicken and pineapple curry rice
In a saucepan with water and a half nut cook i peas for 8-9 minutes from boiling, once ready, drain and set aside. Wash the basmati rice in a pot with plenty of water, drain and put in the pot the water you will need for cooking and the washed rice. Boil and drain one minute earlier than cooking times. Meanwhile, in a pan, put a drizzle ofoil (for a taste more similar to the Asian one, use the seed oil, if you prefer a better quality - however slightly losing the oriental flavor - then use the olive oil) and fry shallot,
when it is golden (be careful not to burn it!) add the pieces of chicken diced,
cook them and sauté until they have reached a golden color, add a little nut crumbled (the glutamate present in the nut is one of the typical ingredients in Chinese cuisine) and at this point add thepineapple cut into small pieces,
sauté everything in a pan for a few minutes. Turn off the heat and keep warm by covering the pan with a lid. Meanwhile the rice will be ready, drain it and rinse it under cold running water. Now pour the rice into the pan,
turn all the ingredients and cook for a few minutes, add the teaspoon of curry powdered peas,
a little bit of soy sauce and finally season with salt. And your oriental recipe is ready: curry rice with chicken and pineapple Enjoy your meal!!!
