Potatoes and artichokes Quick and easy recipe
Potatoes and artichokes: a side dish very simple and tasty that everyone likes; furthermore, artichokes are rich in iron and vitamins, contain few calories, help lower "bad" cholesterol and are good for the skin. Together with potatoes they can also become a single dish in times like this when light and fresh recipes are needed. Obviously we should not overdo it with potatoes which, despite being very good, are still carbohydrates, which give us a lot of energy but also exceeding many more grams! So a few potatoes and lots of artichokes !!!!
Ingredients for 2 people
- 3-4 artichokes
- 2 medium potatoes
- 1 clove of garlic
- extra virgin olive oil
- salt and pepper
How to make Potatoes and artichokes
Cook in boiling water for 4-5 minutes i artichokes cut into slices (the thinner the slices, the less time it will take to cook). Then do the same operation with the potatoes: peel them, cut them into thin slices and cook them for a few minutes in boiling salted water, over medium heat.
Drain and put the potatoes and artichokes in a pan with oil and garlic, cook them for a few minutes and then put the lid on, and cook another 10 minutes, remove the lid, and let the artichokes and potatoes brown.
Turn off the heat, place on the plate and serve with salt, pepper and chopped parsley.
WINE PAIRING: Lively red with little tannins (Lambrusco Marani or Grasparossa, Barbera, Bonarda)
