Pasta with artichoke cream and speck : I find artichokes very good, and I love pasta with artichokes, this time instead of just the slices of artichokes inside I also created a cream in order to give even more flavor to the dish ... then the addition of speck was almost a must . Try it .. it's a delicious dish!
- 300 gr. of artichoke hearts
- 170 gr. of pasta
- extra virgin olive oil
- 2 slices of speck
How to make Pasta with artichoke cream and speck
Clean and cut the artichokes into slices, remove the hardest outer leaves, remove the inner beard, wash them (frozen ones are fine too). Put a pan with a base of extra virgin olive oil on the heat, add a clove of garlic and a handful of washed and squeezed capers.
Add the artichokes and less than half a glass of water, cover and cook for 15 minutes, season with salt. At this point, take half of the artichokes and put them in a small container, use the immersion mixer (but a mixer or blender is fine too), add a ladle of cooking water and mix, you will get a cream that you will keep aside.
In the remaining artichokes add the chopped speck with your hands ... let it become crispy in a pan and turn off the heat.
Cook the pasta and drain it one minute before the time indicated on the package. Keep a glass of cooking water. Put the pasta in the pan, add the artichoke cream and turn to mix all the ingredients.
Serve and enjoy your meal !!
