Pasta Artichokes and Ham Quick and easy recipe
Artichoke and ham pasta: taking advantage of the last artichokes of the season I prepared this very quick and tasty first course, I used diced cooked ham (not to exceed the calories) but if you are not on a diet the pancetta is much tastier. The dish will be ready in about 20 minutes. Try it !!
Ingredients for 2 people
- 170 gr of pasta (I used the "cellentani" or "corkscrew")
- 2-3 artichokes
- 100 gr of diced cooked ham or bacon
- extra virgin olive oil
- 1 lemon
- salt and pepper

How to make Artichoke and Ham Pasta
Clean the artichokes by eliminating the hard outer leaves, remove by "peeling" the outer part of the stem, then leave the inner part of the stem, the heart of the artichokes and the more tender leaves. Cut the artichokes in half, remove the central beard and then cut into thin slices, put them in a bowl with water and lemon juice (to prevent the artichokes from becoming dark).

Put the pot with the water for the pasta on the stove.
In the meantime, cook the artichokes by putting them in a pan with 3-4 tablespoons of extra virgin olive oil, let them cook first by covering them with the lid and then browning them a little to make them more crunchy, then add the bacon or diced ham.

Drain the pasta and pour it into the pan with the artichokes to flavor everything, you can also add a little grated Parmesan. Serve and serve.
