Poached artichokes quick and easy recipe

Poached artichokes: this is a much loved dish of the Neapolitan tradition, the sweet cooking of artichokes enhances their flavor and preserves all the properties of this precious vegetable. It is also one of the simplest ways to cook artichokes. Try it!

Ingredients for 2 people

  • 3 artichokes
  • extra virgin olive oil
  • black olives from Gaeta
  • ½ lemon
  • capers
  • parsley


How to prepare poached artichokes

Remove the outer leaves of the artichokes, cut them into 4 or more parts, remove the "beard" from the artichokes, and place the slices in a container full of water with half a lemon for half an hour to prevent the artichokes from becoming dark,

A drizzle of oil in a pan with high sides (but a wok-type pan is also fine if there are few artichokes; two cloves of garlic, immediately add the artichokes drained from the water and lemon, salt lightly and cover almost completely the artichokes with water,

put the lid not completely closed so that the water can evaporate; cook for 20 minutes remove the lid and let the water reduce, finally add the black olives and the previously washed capers, add a sprig of parsley. Serve and serve. Enjoy your meal!

Properties of the artichoke:

The artichoke is rich in potassium and iron salts, while it has a low vitamin content. We also find some sugars allowed for diabetics, such as mannite and inulin and other minerals such as copper, zinc, sodium, phosphorus and manganese.
The organ that benefits most from the properties of the artichoke is the liver; cynarin, whose benefits are deactivated by cooking (for this reason it is better to consume raw artichoke), promotes diuresis and bile secretion. According to recent scientific research, it has been shown that eating artichokes contributes to the well-being of our body and above all to prevent various diseases. The artichoke has digestive and diuretic properties and, thanks to the presence of inulin, it allows to lower cholesterol levels; moreover, in the heart of the artichoke there is an antioxidant chlorogenic acid, which is able to prevent arteriosclerotic and cardiovascular diseases.
