Pasta and zucchini Quick and easy recipe
Pasta and courgettes: a dish of simple execution, with the addition of soft cheese it is even tastier! There is also the soupy version that I will post to you when it gets a little colder 🙂

Ingredients for 2 people
- 180 gr. of pasta of your choice
- 1 clove of garlic
- 2 medium zucchini
- 80 g. cheese (I used sweet Auricchio, but Asiago is fine too)
- salt and oil as required.

How to make Pasta and zucchini
In a fairly large non-stick pan pour the oil just covering the bottom of the pan, add a clove of garlic and when it begins to brown, pour the zucchini previously cut into slices or thin pieces (so that cooking is quick);

Salt and remove the garlic. Cook for a few minutes over high heat then cover the pan with the lid and finish cooking over low heat. When the courgettes have taken on a nice golden color, turn off the heat. Meanwhile, cook the pasta in plenty of salted water. Separately, cut the cheese into cubes.Pour the pasta al dente into the pan with the zucchini, turn the heat back on over medium heat, add the diced cheese and mix until melted.
Serve and serve your pasta and zucchini hot with a little pepper ...ENJOY YOUR MEAL!!!
VARIATIONS: At the beginning of the recipe add a few strips of speck to the oil in the pan for a tastier recipe!
