Strawberry Strudel Quick and easy recipe

Strawberry strudel and ricotta: Fruit-filled strudels are simple to make, with strawberries it becomes very special. Adding ricotta gives the strudel also a creamy part that is not normally present, for example in apple strudel and pear and chocolate strudel. The recipe is very fast and is also perfect as sweet for mother's day!

Ingredients

  • 1 roll of rectangular puff pastry
  • 7-8 medium ripe strawberries
  • 200 gr of ricotta
  • 3 tablespoons of granulated sugar
  • 2 teaspoons of strawberry jam
  • 1 teaspoon of brown sugar

NB this dessert should be consumed shortly after cooking, just cooled, in order to fully enjoy the characteristics of the pastry. After 4-5 hours the ricotta tends to moisten the pastry and the typical crunchiness is lost.

How to prepare strawberry and ricotta strudel

Turn on the oven and cut the strawberries after washing them, keep them aside.

In a bowl mix the ricotta, the granulated sugar and the jam.

Unroll the puff pastry and arrange the strawberries in the center

on the strawberries add the ricotta

close the strudel by creating a fold with the upper edge and a fold with the lower edge (so as not to let the filling out during cooking) then wrap the filling closing with the left and right flaps,

lightly pinch the edges to seal the strudel.

Place the strudel on a baking sheet with a sheet of parchment paper (you can use the paper already present in the puff pastry package) place the strudel by putting the closure downwards.On the surface brush the strudel with a little water, sprinkle with brown sugar and make small cuts of about 3 cm (not too big because the filling could come out).

The cuts will be used to release the steam and not to break the strudel. Bake at 190 degrees for about half an hour, if it darkens too quickly cover with a sheet of aluminum foil.

During cooking, the juice of the strawberries may come out, don't worry it will make the outer crust even tastier and it will also be spectacular.
