Strawberry and yogurt parfait : this recipe with yogurt is cream it is a valid alternative to prepare an excellent strawberry parfait without using the Italian meringue. Only very few ingredients are needed for the preparation. A perfect spoon dessert for this period. The "wrinkled" effect is due to the film used to easily detach the semifreddo from the mold. Try it!
Ingredients for a loaf pan
- 400 gr of strawberries
- 250 ml of whipping cream
- 2 vanilla (or strawberry) yogurt
- 8 ladyfingers
- 4 tablespoons of sugar
How to prepare Strawberry and Yogurt Semifreddo
Wash the strawberries with the stem, then remove the stem and cut them into small pieces. Put them in a bowl and add 4 tablespoons of sugar, turn and cover with aluminum foil and refrigerate for 4-5 hours, drain the strawberries with a colander, collect the juice in a plate
and blend the strawberries with a mixer. Put the strawberry puree thus obtained in a bowl and add the 2 pots of yogurt, turn.
whip the cream until stiff. Now incorporate the strawberry puree into the whipped cream and turn without excessively removing the cream.
Line the loaf pan with a sheet of cling film. Dip the ladyfingers in the strawberry juice and coat the bottom of the loaf pan with a layer.
Keep the strawberry juice in the fridge to decorate the semifreddo.
Pour all the strawberry and cream mixture into the mold and level the surface. Put in the freezer for at least 5-6 hours (preferably overnight). Serve garnished with strawberries and leftover strawberry juice. Enjoy your meal
