Pasta with swordfish and eggplant Quick and easy recipe
Pasta with swordfish and eggplant: a typical Sicilian dish, also called "Pasta alla Norma with swordfish“, Cooked by my big brother who is passionate about cooking who has lived in Sicily for years… it's a very good first course, I recommend it!
Ingredients for 4 people
- 340 gr. of pasta (I used the "caserecce")
- 2 slices of swordfish
- 2 eggplants
- 15 cherry tomatoes
- extra virgin olive oil
- fresh mint
- White wine
How to make Pasta with swordfish and aubergines
Wash and cut into cubes eggplant, fry them in very hot oil, drain and place them on a plate with absorbent paper to absorb excess oil
cut into slices 3 wedges d'garlic, put them in a pan together with extra virgin olive oil and ai cherry tomatoes previously washed and cut into cubes
cut into cubes (not too small) the swordfish and add it to the cherry tomatoes, add a drop of White wine and cook for a few minutes
finally add the aubergines and adjust salt
In the meantime, cook the pasta and drain it one minute before the cooking time indicated on the package, put the pasta in the pan and the mint leaves (about 20, it is important that you feel the taste of mint!), Let it flavor and cook together for a few seconds and serve. And here is yours PASTA WITH SWORDFISH AND AUBERGINES. Enjoy your meal!
WINE PAIRING: Efeso Val di Neto, is a white wine of Calabrian origin that goes well with these ingredients.
