Ingredients for 40 biscuits
- 250 grams of flour 00
- 125 grams of butter
- 75 grams of powdered sugar
- 2 eggs
- 2 teaspoons of soluble coffee powder
- 1 teaspoon of cocoa
- 1 teaspoon of baking powder
How to make coffee biscuits
Cut the butter into small pieces, put it in a glass bowl and let it soften at room temperature, add the icing sugar and blend with a whisk for a few seconds
add one egg yolk at a time and mix
add cocoa and instant coffee
finally add the flour with the yeast after having sieved them
knead with one hand and create a dough, wrap it in a sheet of cling film and leave in the fridge for a couple of hours
cut the dough into pieces and form balls with the palm of your hand, place them on a baking sheet covered with parchment paper and with your hands give the dough the classic oval shape of a coffee bean, make a small cut on each biscuit (with the not serrated with a knife) bake the coffee biscuits at 180 ° for 10-15 minutes.
