Buffet pizzas : with this recipe you will make delicious pizzas like those in the bar, perfect for buffets. These pizzas have the characteristic of being very soft. They can be made both with the food processor and by kneading by hand. Try them they are excellent!

Ingredients for 15/20 pizzas

  • 250 grams of flour 00
  • 15 grams of sugar
  • 25 gr of lard (or butter)
  • 7 gr of salt
  • 1/2 cube of fresh brewer's yeast or half a sachet of freeze-dried yeast
  • 100/120 grams of warm water (not hot!)
    For the dressing
  • tomato pulp
  • fior di latte (kept for a few hours in the fridge)
  • salt


How to make buffet pizzas

Put the lard and the sifted flour in a large container (or in the food processor and mix) mix with a fork so that it is perfectly blended, always mixing add the sugar and water a little at a time (if you use brewer's yeast cool, let it dissolve in water). Finally add the salt.

Continue to knead (with the food processor for 5 minutes) and then finish by hand on a lightly floured pastry board.

Form a ball and place it in the center of a large container covered with cling film.

Put the container in the oven off and let it rise until the volume of the dough has doubled, about 2 hours. Take the dough and roll it out with a rolling pin to a thickness of about 5-7 mm.

With a pastry cutter, make round pizzas and place them on baking sheets covered with parchment paper.

At the end cover with cling film and let them rest for 1 hour always in the oven off or covered with a kitchen towel in a fairly warm environment. After this time, remove the cling film, heat the oven to 180 degrees. On each pizza create a hollow with your fingers to be able to contain the sauce and mozzarella without making them overflow. Then add the tomato sauce, the mozzarella cut into thin and small slices and a pinch of salt.
