Between preparation and procedure they are ready in half an hour, and if you prepare a few more for the next meal they will be even better, heating them in the oven will rise a little longer. Try them!

- 3 small courgettes
- 2 heaping tablespoons of 00 flour
- 1 heaping tablespoon of self-raising flour
- 3 tablespoons of grated pecorino
- olive oil
- salt and pepper
How to make zucchini fritters
Wash the courgettes and grate them using the grater with the largest holes, salt the courgettes and place them in a colander with a container underneath to be able to collect the vegetable liquid.
put a saucer on the courgettes and a weight to make sure that as much water as possible comes out, leave in this position for about 20 minutes. Also squeeze the courgettes with your hands. In a bowl put the eggs, salt and pepper, beat and then add the flour and grated pecorino,
turn everything and add the zucchini, turn again to mix all the ingredients.
Heat a saucepan with the olive oil, attention the oil must be hot but it must not burn, the smoke point of the olive oil is lower than that of seeds so be very careful that the temperature of the oil does not rise. Put a little dough in the oil and if it begins to sizzle then the oil is ready, pour a little dough with a spoon trying to give it a rounded shape,
let it fry for a few minutes on both sides; collect the pancakes and leave them on a sheet of absorbent paper to remove excess oil. Fry a few pancakes at a time. Serve and pour over zucchini pancakes a little grated pecorino cheese and a little pepper still hot, serve.
