Pasta with clams and zucchiniAlthough courgettes do not have a preponderant flavor in dishes, they are often used to enhance other ingredients, especially seafood. Courgettes are often used with shrimps or anchovies but I love the combination with clams as in this dish. Only a few ingredients are needed, very fresh, I recommend… try!
Ingredients for 2 people
- 400 gr of clams
- 170 gr of linguine
- 2 medium zucchini
- 2 cloves of garlic
- extra virgin olive oil
How to make pasta with clams and zucchini
Wash the courgettes and cut the two ends, then cut them lengthwise into four parts and then cut into cubes, put the courgettes in a pan with 3 tablespoons of extra virgin olive oil and a clove of garlic, let them cook on fire medium for a few minutes, until they have browned and remove the garlic.
Put the zucchini on a plate and reuse the same pan leaving the oil on the bottom, add another spoon and a clove of garlic, let it brown and pour the previously washed clams into the pan (remove the clams open or with the shell broken) , throw the garlic.
Cover with a lid and let them cook for about a minute or until they are all completely open. Turn off the heat and pour the courgettes into the pan. Keep aside.
Cook the pasta and drain it al dente, pour the linguine into the pan and cook over medium heat for a few moments, serve and add the pepper. And your plate of Linguine with clams and zucchini is ready. Enjoy your meal!
