Ingredients for 25 biscuits
- dried red fruits 90 gr
- granulated sugar 145 gr (+ a few tablespoons before baking)
- butter 230 gr
- 2 ampoules of almond flavoring
- 00 flour 290 gr
- grated zest of 1 orange
- the juice of half an orange
- a pinch of salt
How to make berry biscuits
Prepare all the ingredients on the work surface; put in the mixer 3 tablespoons of sugar (taken from 145 grams of granulated sugar) and the dried red fruits, chop everything and set aside.
Put the flour, the butter, a pinch of salt and the remaining sugar in the mixer,
operate the mixer until a sandy grain mixture is obtained. Pour the mixture into a large bowl, add the chopped red fruits, the almond aroma, the juice of half an orange, the grated rind of an orange and mix first in the mixer and then mix first with a spoon then with your hands pouring the dough on a sheet of parchment paper, or on a smooth surface. Create a 4 cm diameter sausage.
Wrap the sausage in cling film and place on a tray in the fridge for at least 4-5 hours. I let it cool all night.
Preheat the convection oven to 160 ° (otherwise static at 170 °).
Remove the film from the dough which, now cold, can be cut easily and without damaging the shape, cut the biscuits to a thickness of 1 cm (during cooking, the thickness will reduce and widen a little) pass each biscuit in a saucer with granulated sugar, place the biscuits on a baking sheet lined with parchment paper (9) space the biscuits (they will expand during cooking) and bake in a static oven at 160 ° for 13-15 minutes.
They will be ready as soon as they take on a slightly golden color.
Remove the cookies from the oven, remove them from the pan (the latent heat of the pan would continue to cook the cookies) and let them cool on the parchment paper. If you want a more regular shape, you can cut them with a pastry cutter (10) or with the molds you prefer, at this stage they are still very soft. Once cooled they harden and are ready to be eaten.
