Savory muffins with peas. In my opinion, muffins are brilliant: perfect for picnics, or for a quick lunch away from home. The portions are ready and practical. But they are also perfect for buffets and then you can indulge yourself using the ingredients we prefer, also ideal for empty fridge recipes! The only drawback is when the dough is too dry and often you touch suffocation 🙂 The secret is to add some ingredients that give more moisture to the dough, in this case I added a mix of olives, corn and peas (ready ) and a little Emmental. Yummy and we're all alive 🙂
Ingredients for 8 muffins
- 240 gr of Valfrutta Mediterranean mix (olives, corn, peppers and peas) Valfrutta - or vegetables to taste
- 150 grams of flour
- 1/2 sachet of instant yeast for savory pies (4 g)
- 120 ml of milk
- 1 egg
- 50 ml of peanut oil
- 100 gr of Emmental
- salt and pepper

How to make salty muffins with peas
Put the sifted flour and baking powder in a bowl, separately beat the egg together with the milk and oil, salt and pepper. Add the beaten egg to the flour, turn everything well.

Add the vegetables (I the Valfrutta Mediterranean mix) and the cheese cut into small cubes.

Turn all the ingredients again and fill the cups 2/3 with a spoon. I used some cute silicone molds that can be purchased on this site www.meincupcake.de

Place the molds on a baking sheet or on an oven rack and bake in a preheated oven at 180 degrees for 20-25 minutes.
Serve your salty muffins warm. Enjoy your meal!
