Chicken Sausage Recipe

Make your own homemade chicken sausages, with herbs, with cheese and wrapped in ham. A recipe that you will love and you will not stop preparing it. You can serve these sausages at breakfast or as an addition at lunch.

Ingredients for making chicken sausages

  • 500 g Chicken minced meat
  • one Lightly beaten small egg
  • one Tablespoon chopped fresh oregano leaves
  • ¼ Cup of fresh basil leaves, finely chopped
  • 3 Tablespoons soft cottage cheese
  • one Cup of fresh and fine breadcrumbs
  • 1 lemon peel, finely grated
  • 4 Thin slices of ham
  • Salt to taste

How to make chicken sausages

1.- In a medium bowl, mix herbs, peel, and breadcrumbs. Add the ricotta and egg to the crumb mixture and mix to combine. Add chicken to mixture of cottage cheese and crumb, mix with hands until completely combined.

2.- Using wet hands, mold the chicken mixture into 8 rough rectangular shapes (depending on the humidity level of your minced meat of chicken, you may need to refrigerate the minced meat mixture for 15 minutes before shaping it).

3.- Place a slice of ham on a clean work surface and with a very sharp knife cut it in half lengthwise and set it aside repeat for 3 o’clock remaining slices.

4.- Wrap half a slice of ham at an angle around one Chicken sausage and set it aside repeat for the remaining sausages.

5.- Heat a nonstick skillet over medium heat and cook the sausages for 4 minutes on each side, then flip each sausage in half (to cook the third side) and fry for 1 minute, then repeat for the fourth side.

6.- Immediately serve chicken sausages with salad or vegetables (or both!) on the side.
